Sweet Potato and Peanut Patties
Ingredients:
- 2 medium sweet potatoes, boiled and mashed
- 1/2 cup roasted peanuts, coarsely ground
- 1 green chili, finely chopped
- 1 teaspoon ginger paste
- 1 teaspoon cumin seeds
- 1/2 teaspoon red chili powder
- 1/2 teaspoon roasted cumin powder
- Sendha namak (rock salt), to taste
- Fresh coriander leaves, chopped
- Oil for frying
Instructions:
- 1. In a mixing bowl, combine mashed sweet potatoes, coarsely ground roasted peanuts, chopped green chili, ginger paste, cumin seeds, red chili powder, roasted cumin powder, rock salt, and chopped coriander leaves. Mix well to form a uniform mixture.
- 2. Divide the mixture into equal portions and shape each portion into flat patties.
- 3. Heat oil in a non-stick pan or skillet over medium heat.
- 4. Once the oil is hot, carefully place the patties in the pan and fry them until golden brown and crispy on both sides, flipping them halfway through cooking.
- 5. Once cooked, remove the patties from the pan and place them on a plate lined with paper towels to drain excess oil.
- 6. Serve the sweet potato and peanut patties hot with a side of yogurt or mint chutney for dipping.
