Samak Rice Pulao
Ingredients:
- 1 cup Samak Rice (Samvat rice)
- 1 small potato, diced
- 1 small carrot, diced
- 1/4 cup green peas
- 1 tablespoon ghee or oil
- 1 teaspoon cumin seeds
- 2-3 green chilies, slit
- 1-inch piece of ginger, grated
- Sendha namak (rock salt), to taste
- Fresh coriander leaves, chopped for garnish
- Lemon wedges for serving (optional)
Instructions:
1. Rinse the Samak rice under cold water until the water runs clear. Then, soak the Samak rice in enough water to cover them completely for about 30 minutes. After soaking, drain any excess water using a fine mesh strainer.
2. Heat ghee or oil in a pressure cooker or deep saucepan over medium heat.
3. Add the cumin seeds to the hot ghee/oil and let them splutter.
4. Add the diced potatoes, carrots, and green peas to the pan. Sauté for a few minutes until they begin to soften.
5. Stir in the grated ginger and slit green chilies. Sauté for another minute to release the flavors.
6. Add the soaked Samak rice to the pan and sauté briefly with the vegetables.
7. Pour in 2 cups of water and season with rock salt according to taste. Mix well.
8. Close the pressure cooker lid or cover the saucepan with a tight-fitting lid. Cook the Samak rice pulao on medium heat until the rice is cooked through and the vegetables are tender (about 1-2 whistles in the pressure cooker or 10-12 minutes in a covered saucepan).
9. Once cooked, remove the pressure cooker/saucepan from heat and let it rest for a few minutes.
10. Fluff the Samak rice pulao gently with a fork. Garnish with freshly chopped coriander leaves.
11. Serve hot with a side of yogurt or cucumber raita and lemon wedges if desired.
