Buckwheat (Kuttu) Dosa

Ingredients:

  • 1 cup buckwheat flour (kuttu ka atta)
  • 1/4 cup grated bottle gourd (lauki)
  • 1 green chili, finely chopped
  • 1 teaspoon cumin seeds
  • Sendha namak (rock salt), to taste
  • Water, as needed
  • Oil or ghee for cooking

Instructions:

  1. 1. In a mixing bowl, combine buckwheat flour, grated bottle gourd, chopped green chili, cumin seeds, and rock salt. Gradually add water to form a smooth batter with a dosa-like consistency.
  2. 2. Heat a non-stick dosa pan or skillet over medium heat.
  3. 3. Once the pan is hot, pour a ladleful of the buckwheat batter onto the center of the pan and spread it in a circular motion to form a thin dosa.
  4. 4. Drizzle a little oil or ghee around the edges of the dosa and cook until the bottom side is golden brown and crisp.
  5. 5. Flip the dosa using a spatula and cook the other side until it's cooked through and lightly golden.
  6. 6. Repeat the process with the remaining batter to make more dosas.
  7. 7. Serve the buckwheat dosas hot with a side of coconut chutney or peanut chutney for a delightful fasting meal.

A light and fulfilling meal for weight loss. For making it wholesome add some paneer stuffing to the dosa.
